A Story Rooted in Tradition: The History of Nicksan Nuevo Vallarta
Nicksan’s journey began in Los Cabos, where its unique concept was first introduced. Founded by visionaries, one of whom was of Japanese origin, the brand brought together authentic techniques and a deep respect for culinary tradition.
When Nicksan arrived in Nuevo Vallarta, its founders personally shared their knowledge, techniques, and secrets, ensuring that the restaurant would carry a true Japanese soul, now living and thriving in Banderas Bay.
Since then, the concept has remained faithful to its roots while continuously evolving, embracing innovation year after year without ever losing its essence.
A Special Celebration for the 16th Anniversary

To commemorate this year’s anniversary on March 27th, 2026, we have prepared a truly special experience. Guests are invited to enjoy an exclusive afternoon featuring a vertical tuna ronqueo demonstration, an innovative twist on a traditional technique that will be showcased for the first time not only at the restaurant, but across Banderas Bay.
Guiding this unique experience will be Chef Ángel Carbajal, visiting from Nicksan Los Cabos, who will lead the demonstration and share his expertise throughout the event.
